Grilled Corn Cakes

Grilled Corn Cakes

2 cups corn (can be frozen and thawed or even that left over corn)

3/4 cup grated cheese (I used a Mexican shredded cheese blend)

1/2 c. bread crumbs

2 t. chopped red onion or chives

1 T. sour cream or vanilla yogurt

dash of salt and pepper

My Little Helper

Put the corn in a food processor for a couple of minutes until the corn becomes milky and kinda creamy. Put into bowl and add all the other ingredients.

Form into little cakes and place on plate. Put in the fridge for about 20-30 minutes.

Take them out and cover in bread crumbs. Grill until grill marks appear on the cakes. It becomes kinda crispy on the outside. Enjoy:)
